- 2 cups water
- 1 tablespoon olive oil

- 2 cups spinach, chopped

Directions
- Preheat oven to 350°F (175°C).
- Cut off the tops of the bell peppers and remove the seeds and membranes.
- Rinse quinoa thoroughly in a fine-mesh strainer and then combine with water in a saucepan.
